Melonball Choc Mint Ice Cream

  • 2 Melonballs, cut in half
  • 1 cup full cream milk, well chilled
  • ¾ cup caster sugar
  • 2 cups thickened cream, well chilled
  • 2 tsp pure peppermint extract, or to taste
  • 100g dark chocolate, chopped into tiny pieces
  1. In a bowl, whisk the milk and sugar until dissolved. Stir in the cream and peppermint extract.
  2. Pour into an ice cream maker and churn for 25 minutes.
  3. Add chopped chocolate during the last 5 minutes.
  4. Transfer to an airtight container and freeze for 2-3 hours.
  5. Serve scoops in half Melonballs, topped with a piece of chocolate.
