Watermelon, strawberry, mint & bocconcini salad with white balsamic vinaigrette

Ingredients.
1 ½ cups seedless watermelon, 1.5cm cubes
1½ cups strawberries, dehulled & halved
100g cherry bocconcini, drained & halved
250g endive salad leaves
½ small head radicchio, torn into bite-size pieces
1/8 cup fresh mint leaves
¼ cup extra virgin olive oil
1 ½ tbsp white balsamic vinegar
2 tsp honey
2 tsp lemon juice
Salt
Black pepper, freshly cracked
Method.
Arrange the watermelon, strawberries, bocconcini, endive, radicchio and mint on a platter.
Add the olive oil, white balsamic, honey, lemon juice, salt and pepper to a jar. Screw the lid on tightly and shake vigorously.
Drizzle the vinaigrette over the salad and serve.
