Watermelon, strawberry, mint & bocconcini salad with white balsamic vinaigrette

Ingredients.

  • 1 ½ cups seedless watermelon, 1.5cm cubes
  • 1½ cups strawberries, dehulled & halved
  • 100g cherry bocconcini, drained & halved
  • 250g endive salad leaves
  • ½ small head radicchio, torn into bite-size pieces
  • 1/8 cup fresh mint leaves
  • ¼ cup extra virgin olive oil
  • 1 ½ tbsp white balsamic vinegar
  • 2 tsp honey
  • 2 tsp lemon juice
  • Salt
  • Black pepper, freshly cracked
Method.
  1. Arrange the watermelon, strawberries, bocconcini, endive, radicchio and mint on a platter.
  2. Add the olive oil, white balsamic, honey, lemon juice, salt and pepper to a jar. Screw the lid on tightly and shake vigorously.
  3. Drizzle the vinaigrette over the salad and serve.
